Melt-In-Your-Mouth Melting Potatoes Recipe

Ingredients

  • 4 cloves garlic
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 pounds Yukon gold or russet potatoes, about 4 to 5 medium potatoes
  • 2 to 3 sprigs fresh rosemary
  • 1 cup vegetable or chicken broth

Instructions

  1. Position a rack in the middle of the oven and preheat to 450°F. Peel and smash four cloves of garlic.
  2. In a large microwave-safe bowl, place 2 tablespoons unsalted Butter. The butter should be microwaved in 10 second intervals. Stir each time until it becomes melted. Mix in 2 tablespoons olive oil, 1 teaspoon kosher salt and 1/2 teaspoon black pepper.
  3. If you’d like, remove the skins from 2 lb. Yukon gold potatoes or russet potatoes. The potatoes’ rounded ends can be removed. Next, cut the potato crosswise into 1-inch rounds. You will need to chop 2 to 3 rosemary stem leaves until you have 1 tablespoon. Mix the butter with the potatoes and rosemary until well coated.
  4. Arrange the potatoes cut-side-up in one layer on a rimmed 9×13-inch metal baking pan or sheet (avoid glass as they could shatter).Place the rest of the butter mixture over the potatoes.
  5. Bake the potatoes for 15 minutes, or until they are easily flippable. Roast the potatoes for another 15 minutes, turning once more.
  6. Take the potatoes out of the oven. Pour in 1 cup broth. Finally, add the garlic cloves. Continue roasting for another 15 minutes, until most of broth is absorbed by potatoes. Enjoy!
