Here’s how you can make Ina Garden’s easy-to-cook roast turkey.

You’ll need the following ingredients to make Garten’s favorite Thanksgiving recipe for four:

  • 1 fresh turkey (she recommends 8-10lbs).
  • 1 large yellow onion, chopped and sliced crosswise
  • 8 sprigs fresh rosemary
  • 4 tablespoons unsalted butter melted
  • 2 teaspoons chopped fresh thyme leaves
  • 1 lemon, quartered
  • Grated zest of ½ lemon
  • Kosher salt, freshly ground black pepper

Garten’s easy-to-prepare turkey recipe calls for some planning ahead. Preparation must be done at least two to three days prior to roasting.

Begin by mixing two tablespoons salt with the lemon zest and thyme. The turkey should be washed inside and out. Drain the turkey well and then pat it with paper towels. Next, sprinkle plain kosher sea salt over the turkey’s cavities. Use the lemon and salt mixture to rub all over the turkey’s skin.

Place your turkey on a plate large enough for it to rest in. Place the bird in a shallow dish and cover it with plastic wrap. Refrigerate for at least one to two days. The plastic wrap should be removed the day before the turkey is to be roasted.

Pre-heat your oven to 350 degrees Fahrenheit when you are ready for roasting. Place the turkey in an oven-proof pan. Your turkey’s legs should be joined and the wings should be tied to the body.

Place the onion slices around your turkey. Sprinkle pepper on top. Your turkey should be roasted for between 75 and 90 minutes, or until the meat reaches 165°F. Remove the turkey from the oven and transfer it to a platter. Next, place your roasting pan in the oven to cook your dark beef for 15 to 20 more minutes until it reaches 180 degrees.

Place your dark meat on a platter and take your oven out. Place aluminum foil over all pieces of turkey and let them rest for at least 15 to 30 minutes.
