Heart of the Batter

by Lauren Lustgarten

Valentine’s Day is the perfect time to show your loved one how much you appreciate them, not only with gifts, but something better: food. Looking for the perfect dessert to make your loved one this Valentine’s Day? These ‘Heart of the Batter’ cupcakes are perfect for you.

With just 30 minutes of preparation and 30 minutes in the oven, these appealing and delicious cupcakes will be the highlight of your night. First, preheat the oven the 350 degrees. Line a six-cup jumbo muffin pan with liners. Whisk the flour, baking powder and salt in a bowl.

Beat the butter and granulated sugar in a bowl with a mixer on medium-high speed. Once the batter is light and fluffy (after about three minutes), beat in the eggs one at a time, following with the vanilla extract.

Reduce the mixer to low speed while beating in the flour mixture in three batches, alternating with the strawberry milk, beginning and ending with the flour until all is combined.

Divide the batter evenly among the muffin cups. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool for five minutes then remove to a rack to let cool.

Using a paring knife, cut a cone-shaped piece of cake; about the same size of the strawberry, out of the top of each cupcake. Stop at about ½ inch from the bottom, then stuff with the strawberries. Cover with the removed piece of cake.

Frost each cupcake with a frosting of choice and then top each cupcake with a strawberry half and enjoy!

Ingredients:

1 ½ cups of all-purpose flour

1 ½ teaspoons of baking powder

½ teaspoon salt

1 stick unsalted butter, at room temperature

¾ cup of granulated sugar

2 large eggs, at room temperature

1 teaspoon vanilla extract

½ cup strawberry milk, at room termperature

6 strawberries, hulled

Creative, Personalized Valentine’s Day Gift

by Lauren Lustgarten

Valentine’s Day is a day to show your loved ones that you care. Most do it through buying gifts, but some like to do it by getting in touch with their creative side by making gifts for their loved ones. Some however, don’t have a creative bone in their body so making gifts can get a bit confusing and more times than not, the finished product doesn’t look anything like the picture. A simple, cheap and cute idea for your loved one seems hard to come by these days, but here is the most perfect one. It is called the “Five Senses” gift.

Step one is getting the supplies. Run over to your local craft supplies store and grab five little folding boxes. Then take sticky labels from the scrapbook section and colorful ribbon of your choice. To add some fun to the boxes, grab some shredded pink, white and red paper.

Step two involves finding the perfect gifts. Assuming you know your loved one well enough to know their likes and dislikes, figuring out what they like should be easy enough. Label one box “Sight” and fill it with anything that goes with the sense of sight. One idea could be if you two enjoy going to the movies or even just watching movies, you can fill that box with a gift card for a movie theater or even their favorite movie on DVD.

Label another box “Taste.” You can fill it with their favorite candy or their favorite baked goods or for those over 21, their favorite alcohol in mini bottles. You can go anywhere with this one! Label another box “Touch.” In this one, a perfect idea would be getting your significant other a gift certificate for a massage or if they’re into manicures/pedicures, a gift certificate for the nail salon. Your next box is “Sound.” In this one you can put an iTunes gift card, their favorite artist’s album, headphones or you can even burn them a CD containing all their favorite songs. Finally, label your last box “Smell.” This one can be tough to think of ideas, but you can fill it with their favorite smelling cologne/perfume, a candle or air fresheners.

You don’t have to spend too much money for this idea at all. You can take many different routes with what you fill your boxes with. This is the most perfect and thoughtful idea, your loved one won’t expect it from you.

Ingredients:

4 cups crumbled chewy chocolate cookies

1 ½ cups marshmallow crème

2 teaspoons McCormick Raspberry Extract

12 ounces semi-sweet chocolate chips

1 ounce white chocolate, melted

The Super Bowl is a day all football lovers, and even those who couldn’t care less about football, look forward to every year. It’s a Sunday filled with friends, family, football, drinks and best of all, a lot of food. What more could you ask for? While everyone prepares differently for their Super Bowl gatherings, either by buying pre-cooked meals or getting creative and making food themselves, it is a given that it will be eaten, no matter what.

This Super Bowl, try something new! Please your peers with some fun chocolate raspberry football cookie truffles. This easy-to-make, great tasting dessert will top off everyone’s full bellies during the fourth quarter. Allow yourself just 20 minutes to make 18 of these delicious treats.

To start, mix the crumbled cookies with the marshmallow crème and raspberry extract in a large bowl until well blended. You then shape the mixture into one-inch ovals, like a football. Setting those aside, you can melt the semi-sweet chocolate chips. Use a utensil to dip one truffle at a time into the melted chocolate. Allow any excess chocolate to drip off before placing them onto a waxed paper-lined tray.

Put the tray in the refrigerator for 30 minutes. Once the truffles are set, you can melt the white chocolate and spoon it into a small resealable plastic bag. Cut a small piece from one of the bottom corners of the bag, then close the bag tightly. This is when your artistic abilities need to shine. With the bag of white chocolate, score lines on each truffle like the lace of a football. Then, leave the truffles until the white chocolate is set. These delicious footballs are sure to be a crowd favorite that you will want to make for every football game.
